John Galt Coffee Company is the newest coffee shop in Greeley, and it is the way it serves its coffee that makes this reasonably-priced coffee shop interesting and different.
The staff manually brews the coffee in front of their customers and offers different brewing methods to serve coffee such as the French press, aeropress, pour over and the syphon pot.
While the coffee is brewing, the customers get to listen and learn about the uniqueness and differences of manual brewing methods.
"It's a different experience for a lot of people - they are much more involved in the process of brewing," owner TJ Wilson said. "The experience allows the customer to see what's happening along with the education piece we tell them while brewing."
The name of the coffee shop came from the book "Atlas Shrugged" by Ayn Rand.
"The first line of the book is "Who is John Galt?" because he is a very important character from the book," said Joni Lissak, Wilson's girlfriend and an employee at the coffee shop.
Rand is one of Wilson's favorite authors and his naming of the coffee shop after a character from one of her books was a tribute to the distopian storyteller.
John Galt Coffee Company is located on 709 16th St. across from Roma restaurant. The coffee shop is in the Atlas Theater and opened Oct. 12. The coffee shop is about 15 minutes walking distance from the university.
"It's a little out of the way from where I live, and it offers the best coffee in Greeley," UNC graduate student Zachary Martinez said.
The company's coffee beans are imported from Denver and some of its baked goods are imported from Loveland.
"We currently use two main roasters: Novo and Allegro, both are very delicious coffee beans," Wilson said.
Customers recognize the creativity used at John Galt Coffee Company and appreciate the study friendly environment it offers.
"I think it's a really fun way to serve coffee," said UNC graduate student Scott Treas. "It is almost served more in a historical accurate sense as we see the coffee process. It is not just in a pot."
Wilson decided to open this coffee shop to add richness to the community of Greeley by offering a different way of enjoying coffee.
"I started working at a previous shop and began really focusing in the art process of coffee making. I began geeking out and trying to learn everything I could on ways to brew better coffee," said Wilson.
Wilson who is originally from Colorado Springs also decided to open the coffee shop to offer students a place to go late at night. The coffee shop is opened Monday-Saturday from 9 a.m. to midnight and Sunday from noon to midnight.
"Since I am a night owl, I noticed Greeley did not have good options to go to at night," Wilson said.
Evenings are when John Galt Coffee Company is busiest.
"I think this coffee shop is really pouring back into the Greeley community and UNC campus by offering places to study and places where they serve good coffee and where going out to a bar is not the only option to go to hang out," said Treas.
Wilson is expecting John Galt Coffee Company to be a sustainable place that profits both the community as well as himself.
